Peter is the author of 10 books on bread, pizza, and food culture, and he has consulted with many pizzerias, bakeries and international product-development companies. He is a faculty member and baking instructor at Johnson & Wales University in Charlotte, N.C., as well as a popular and inspirational speaker at numerous foodservice events and conferences.
